Home Sweet Home...

So, I finally had a day off from work on Saturday and I was able to go back home!!! Even though I was only there for a day (I had to work at 8am on Sunday) it was a lot of fun.

I got home Friday night after work and Mama, Daddy and I just sat around and talked about life in general until we all decided it was in our best interests to go to sleep. I woke up Saturday morning watched a little TV with Mama and Daddy before we started our day. Daddy had to cut the grass so he did, and we had planned the night before we were going to grill bratwurst and hot dogs for lunch :-) so Mama and I went to the grocery store.

With our individual missions accomplished we fired up the grill, waited for the charcoal to heat up (the best way to cook brats is over charcoal in my opinion), and we were on our way to a fantastic lunch. While Daddy got the grill ready I helped Mama cut squash into very thin layers because she was making fried squash for our side dish. Let me just tell you, Mama can fix some good food! We ate the squash almost as fast as she could get them out of the frying pan. We finished cooking and then sat down to eat.

The food was delicious! We watched "Defiance" while we ate, it is a really good movie that is a true story of how Jewish people from Bella-Russia survived during the Holocaust. I won't get into too much detail because I am giving it my Gold Star recommendation for anyone who is interested in watching it. After the movie we went to Grandma and Grandy's house to talk for a while before going to supper.

Supper took place at none other than San Jose (the best Mexican restaurant I've had thus far in my life). We ate, talked, joked, laughed, enjoyed the authentic Mexican tunes playing in the background it was an all around good time.

After supper we went back to the house for me to grab my stuff and say good-bye to the dogs (Xena, Sweetie, and Happy) and Garth our cat. I returned to Greenville and just relaxed for the night.

Usually on my blog I tend to stick to just the little stories of my life which hopefully the people of my blogosphere (the new level of the atmosphere that revolves around my blog) find amusing. But, today I just wanted to remind everyone how important family is. Our families are the people that God intended us to be with and learn from and also to cherish. So take time to enjoy the little things with your family because I think sometimes we take those moments for granted and don't realize we may never get another chance to experience them.

No Peanuts and B please...

As I sit here with my Irish breakfast tea and english muffin with pumpkin butter (I love pumpkin butter), I am thinking about the adventures of yesterday. Rachel and I went to the pool out at The Landing yesterday. It was so nice to be able to chill out by the pool and relax, it is really starting to feel like summer! Rachel had to go to work so she had to leave before it really felt good outside but, there will be other days. After lunch I stayed out at the pool for about an hour and a half where I proceeded to get mildly sun burnt.

After Rach got off work we went to eat Thai food with Chris, Amanda, and Lily at the Thai Kitchen. None of us had ever had Thai food before so it was a new adventure for us all. We tried to play it safe and if I could spell what I ordered I would write it down but I cannot so I will attempt to describe it. It has noodles with chicken, peppers, crushed peanuts, and type A spicy sauce. FYI: Sauce runs from A-E, A being the least spicy. It was pretty good but, the sauce was a little too sweet and the crushed peanuts throughout the entree threw me off a bit. So, basically I said all of that so that I could tell you if I ever eat Thai food again I will remember to ask for no peanuts and B sauce.

After supper we went back to the Avery's house to watch "Driving Miss Daisy." AMAZING movie, if you haven't seen it make sure you take the time at some point in your life to just sit down and enjoy an awesome movie. I give it 2 thumbs up!!!

Hanging out with Chris, Amanda, and the girls is always fun. I think Lily is enjoying Molly being gone to the beach. She was just dancing around and singing all night, so cute!

Today is cloudy so chances are I won't be going to the pool. I am probably going to study for my anatomy and art history exams at some point today. I would also like to find a good book to read, so any suggestions are welcome. Well, I am getting ready to take Josh to his exam. I hope everyone has a great day!

Chillin'

I am at the apartment, I just woke up, I am watching episodes of Two and a Half Men, I am loving life right now. Classes are over for the semester and I only have two exams to take!!! I will be going out to the pool here at The Landing at some point today to just relax until I have to work. I have been working quite a lot here lately, pretty much every night 4:00-9:30 and weekends 2:00-9:30 and 2:00-8:30. So a break during the day where I don't have to go to classes is great! Work is going really well. The Fresh Market is awesome, the people there are friendly, and the store itself is really nice. I am really excited to see what summer has to offer this year!

It has been a while...

It has been quite a while since I last blogged, and a lot has happened all of which is for the better.

I would like to start by notifying my blogging community that I am now employed by The Fresh Market. I would like to take the time to say thanks to Erin and Beth for providing me with the opportunity (from what I hear they gave me quite the references). I appreciate it more than I can say!

Also, the weather has taken a wonderful turn toward WARM!!! In a way this is awesome because I can now go out to the pool and relax, play with Molly and Lily outside when Rach and I visit the Averys, and finally I can comfortably wear short sleeves on a regular basis. On the other hand, it is really making these last couple of weeks of school extremely difficult because I am quite unmotivated to do school work due to the many other wonderful outdoor alternatives (I think anyone who is currently enrolled in school will agree with this). Please don't take that as me complaining about the warm weather because I am NOT by any means complaining about sunny weather!

One thing that hasn't changed is the fact Rachel and I are still together after nearly 8 months. I'm not trying to be mushy but I'd like to let Rachel know she is the best and I appreciate everything she does. Love ya Rach!

I am really looking forward to some volleyball this summer. We got a chance to play last Saturday at Bring It On. As usual, Jessica Martin did an excellent job planning and organizing the event. We went out to River Park North and played volleyball, threw the frisbee, and were able to paddle out on the boats into the middle of the lake they have there. It was amazing! But like I said it was a typical Bring It On......AWESOME!!!

Josh and I were both able to go home for Easter weekend, which also happened to be the weekend of my birthday. It was so much fun to be able to be back at home with the whole family. With work and everything keeping Josh (who just survived his first tax season as an accountant) and I away from home it was nice to be able to go back and spend time with everybody.

I hope everyone has an amazing rest of the week and rest of the semester. Remember it's almost over...and like a baseball coach of mine once said, "Finish strong!"

Warm Weather


Some warm weather is a welcome change as far as I'm concerned. I enjoy being able to go outside and throw the baseball or go feed the horses without having to be bundled up like an Eskimo!


We recently had a birth out at Sanctuary Farm Lu Lu gave birth to a little colt named "Mini Cooper" he is absolutely adorable and has a lot of charisma. For the past couple of days I've gotten out to the barn earlier than normal just so that I can spend a few minutes watching him before I have to start feeding. It makes me happy to see him just romp around and play with his mama.


Also, I registered for classes last week. Kind of a stressful time trying to get all the classes I needed at times that weren't awkwardly spaced apart. I am really excited about the scuba diving class I signed up for I think it will be a lot of fun. Plus, upon completion I will be a certified scuba diver!!!


Guess I should leave for 2:42 I will post some more random tid-bits about my life later.

Disney World...

Was absolutely amazing! As most of my small blogging community knows, I went to Walt Disney World for the week of spring break. My Mama, Grandma, and I left NC on Saturday morning headed for Disney. We stopped in South Carolina to eat lunch at Angelou's (a seafood restaurant run by a very nice Greek family that Grandma and Grandy have known for a long time). After eating we were on the road again. And we were on the road some more..........and some more.........and we were still on the road............and finally we arrived at our new home for the next week!!! And there it was, the most glorious resort I have ever stayed at in my life, Animal Kingdom Lodge.

The 6 story, thatched roof resort complete with open savannah for all sorts of African wildlife to roam across. It was perfect! And here is how you know it is one of our family trips, no sooner had we parked the car at the check-in station when a very nice gentelman approached us and asked us if we wanted assistance with our luggage. We kindly replied no we've got it and he says okay well get it out of your car and go check in. Well....FYI Mr. Valet Concierge Man thats not how we typically do things we usually check in first then get our luggage out of the car just in case the scenario plays out where we can't get connecting rooms and we change resorts last minute to accomodate our needs (I'll just interject here you could not have pried me away from that resort with a crowbar...). He kindly replied alright well give me your keys to which my mama promptly handed him and said here you go without even thinking where this perfect stranger was going with our car. We checked into the resort, got our room numbers, went back to the car and after seeing how long of a journey it was to our rooms decided to let them assist us with our luggage after all. The rooms were amazing, two queen sized beds, a large vanity mirror with two sinks, a pretty sweet shower, and there it was...the balcony overlooking the savannah. I pulled back the curtains, opened the door, and my eyes looked upon a giraffe!!! I just want to repeat that, there was a giraffe right outside my window staring me in the face! Needless to say I was pretty excited and I will admit it was a little difficult to even leave the comfort of my balcony to go to the parks.

However, I did leave the comfort of my balcony to go out into the parks. They were all amazing (Magic Kingdom, Epcot, Hollywood Studios, Animal Kingdom). In Magic Kingdom there was Cinderella's Castle, The Haunted Mansion, Big Thunder Mountain, Pirates of the Caribbean, The Tea Cups, and coutless other rides and attractions. And of course, it is Disney World, there were tons of characters. Animal Kingdom provides a plethora of pachaderms (thats just me being silly) they have a lot of animals not just pachaderms. In addition to all of the animals they have Expedition Everest, The Primeval Whirl, Kilamanjaro Safaris (which showcases the animals in a natural environment), an awesome Finding Nemo broadway-esque musical, and Dinosaur (it is pretty scary.....I'm lying its terrifying lol). Epcot has World Showcase, Test Track, Soarin', Mission Space, and of course Spaceship Earth (the ride inside the Epcot ball). Hollywood studios is pretty action-packed with rides such as Rockin Rollercoaster featuring Aerosmith, Tower of Terror, The Great Movie Ride, Star Tours, and this nifty new ride called Toy Story Mania which is a 4-D ride where you try to shoot random objects using your toy sized cannon (it is really fun I don't feel like that description does it justice so if you are curious about it just ask me and I will be better able to communicate because I will be able to talk with my hands). It was an awesome vacation and it was really refreshing to get away for a little while. I am sure I will share some more stories from Disney but for now I am done.

Valentine's Day Weekend


This weekend was awesome! I couldn't have imagined it going any better than it actually did. Friday was the last day of classes for the week, which is always exciting because I know I get to relax for two days. I went out to the barn to feed the horses that afternoon and if you can believe it all of them were like perfect little angels. So I got back into Greenville and Rach and I decided to go to O'Charley's as our Valentine's Day dinner (we were watching Molly, Lily, and Silas Saturday night). This worked out perfectly because we were able to walk right into the restaurant, get a table for two, and have a nice sit-down meal together without all the hustle and bustle of Valentine's Day reservations and all that good stuff. After supper we went over to Rachel's house and watched Madea's Family Reunion (amazing movie) and relaxed. Rachel gave me my Valentine's Day presents ( a red polo shirt, a Best Buy gift card, Reese cups, and homemade pumpkin bread, not to mention a super creative Valentine's Day card). I was really excited about all of this and it made my day!
Saturday arrived and it was officially Valentine's Day. A group of us planned to go to the annual Purple vs. Gold Scrimmage, where the ECU baseball team scrimmages before the home opener ( I know, to most of you this may not sound like the Valentine's Day event that just knocks your socks off but, I like baseball and Rach does too so we went). The group consisted of, Me, Rachel, Mama, Daddy, Josh, Morgan, Jordan, and Beth. We watched the game and then ventured off on our separate adventures. Rach and I went back to my apartment for a few minutes before we had to leave so I gave her the white sapphire necklace I had gotten her for this special occassion (she loved it). After that we went over to the Woolard household where we were watching Silas, Molly, and Lily. Lindsey, Amanda, Chris W., and Chris A. had us a pizza and some Coldstone cupcakes for supper! They went to see Fireproof and we played with the kids until they got back. Those three children are undoubtedly the cutest kids ever and Rachel and I had a blast playing and watching Bambi with them. When we left the Woolard's we went home and I gave Rachel "Father of the Bride"and we watched that, it was really good and it capped off a great day.
We all went to church on Sunday morning and then to lunch at Mazatlan. I had to work so I went out to the barn afterward. When I got back into Greenville I went over Rach's house she made baked spaghetti for supper (she's quite the cook even though she is to modest to admit it). We talked for a while then Aaron, Rach, and I came back to my apartment where Josh, Tim, and Byron were playing video games. We hung out and cracked jokes for a while before we all got tired and had to migrate to our individual homes and go to sleep.
It was a great weekend and I would like to say thanks to all of those involved, you guys and girls are amazing!

Horses...



As most of y'all know horses have been a big part of my life since last year when Leslie Donnelly, one of the coolest people I have met since being in college, taught me how to ride. Ever since then rarely a day has gone by where I haven't been around a horse. I feel like being around horses is just one of the many wonderful experiences I have had since coming to ECU but, it is by far one of the most important to me. If you have been around me for more than 15 minutes you have probably heard me mention a name like Egan or Merganzer or Callie. Just for the record these are names of horses out at Sanctuary Farm. They are all unique and have very distinct personality traits that make them special. My current job out at Sanctuary is to feed and care for the horses on a daily basis. This is something I really enjoy being able to do because it gives me a chance to be around animals as well as an opportunity to learn about horse care. My hope is that one day I will have learned enough to have a barn of my own and I will be able to look back and know that it was these opportunities that gave me the experience needed to fulfill my dream.

What a Day.


Well today has been one of those days where everything seems so....(for lack of a better word)...blah! I was really tired this morning and classes didn't help that fact. I didn't go to the Rec. Center this morning, Rach and I decided we would work out on the Bow-Flex at her house instead. I sat through anatomy lab for 3hrs(I only get one credit hr for it so it seems kind of like a waste of time despite the fact that some of the material is really interesting). I went home and grabbed a snack before I left to go feed horses. This is where my day gets fun. I arrive at the barn to find Harvey (one of the funniest/most infuriating ponies of all time) running around in the girl's pasture. As Harvey is a boy this posed a problem because he was making the girls run around like chickens with their heads cut off in a very small scale stampede. Also the other boys (Egan, Gabe, and Merganzer) were running around because they couldn't get in there with the girls. After about a 20 minute effort I wrangled Harvey out of the pasture, and took him to his stall. I proceeded to get all the other horses in their respective stalls and give them all their evening meal. After all of my duties at the barn were fulfilled I went home ate supper and went to Rachel's where we were going to watch the new episode of LOST...I arrived to find out that the new episode of LOST would not be airing until 1:00am. So Rach and I worked out for a while then played a game of Life (she won). Overall it wasn't a bad day, because any day that we are still alive is a good day but, it had some mildly frustrating aspects.

Snow....in North Carolina!?!?!


So as we all know it snowed here in North Carolina this week. I was ridiculously excited because the last time it snowed here any significant amount I was in Florida and I missed what is a miraculous event in NC. I stayed up the night before to watch the news at 11 where they promised me snow. Like a small child, I woke up in the middle of the night every few hours to check and see if it had indeed snowed yet. Much to my dismay every time I checked there still wasn't any snow. When I finally got out of bed for good at 5:45 and there still wasn't any snow I had given up. I was sure it was just like every other time they call for snow here and by some devastating turn of events the elements needed for snow to fall do not align in the atmosphere. I figured I would just watch ESPN until it was time for me to go to school when out of the corner of my eye I caught a glimpse of snowflakes falling outside mine and Josh's apartment window! I didn't even bother checking ECU's website to tell us if school was cancelled, I wasn't going if it was snowing. When I thought everyone else in the world might possibly be awake and some snow had accumulated I went to Rachel's house to play in the snow. (We don't have adequate room to play in the snow at the apartment complex.) When I got there Rachel laughed at me and told me I was worse than a small child. We proceeded to play in the snow for a while (until we got cold) and went inside. By the way, I totally beat her in a snowball fight, though she will never admit it. We spent the rest of the day watching movies and eating snow cream that Rach had made, it was delicious. I have to say it was a pretty awesome day!
